To remove the saddle from your horse in Red Dead Redemption 2, you first have to approach your horse. From there, hit and hold L2 to bring up the menu for the horse options. Then, you’ll have to press up on the D-pad to remove the saddle from the horse. The game will explain this mechanic during Chapter 2, and the quest that Hosea gives you.
